Use cortina, it works pretty well. It can set the desktop background picture to be set a random file from a given directory. It can be installed via Ubuntu Software Center.

Given your configuration I would suggest XFCE, it is pretty good and very similar to GNOME 2 but light on resources.

Try debfoster. First install it using sudo apt-get install debfoster and then run sudo debfoster kubuntu-desktop. It will remove all meta packages installed as part of kubuntu-desktop.

Using gnome-open to open pdf files

Working fine for me, gnome-open opens up Adobe Reader properly. Could you try with Adobe reader once. Might be the case that evince is not properly set as default somewhere. I am using Natty BTW.
