There is a flatpak program called bottles.
It allows you to configure multiple instances of WINE with different versions and much more.

Unable to install wine stable because of "broken packages"
32-bit is not enabled on your system.
Do:
sudo dpkg --add-architecture i386
sudo add-apt-repository universe
sudo apt update
sudo apt full-upgrade
sudo apt install wine-stable

I got Spitfire Audio working again in PlayOLinux.
