rsync with --delete-before except if source empty
you can specify source path with a .. like this:
rsync [opts] /mnt/source/.somedirectory/../ /mnt/target/backup/
you can pick any folder that already exists and you will never delete

Using rsync with sudo
The sudo -v option doesn't seem to be working for some reason, perhaps because it's SSH, or because you disabled timeouts. Let's avoid it:
