After upgrading to 19.04 I've noticed that some dialog windows are still white even while using a dark theme (Adwaita-dark in my case).
Is there any way to make these windows dark like the rest of the theme?

The dialog you are seeing is themed according to your current Gnome Shell theme, not according to the current application theme.
By default, the gnome shell theme is dark, black. That you have a white dialog tells me you have a custom Gnome Shell theme active. You will need to change that to a dark theme.
Because you appear to have a custom Gnome Shell theme, I suppose you know how to set and change a Gnome Shell theme.
