To upgrade all packages on my Ubuntu 18.04 Server, I'm using sudo apt -y upgrade and it works fine as expected.

I'd like to automate upgrading using cron, but one specific package, onlyoffice-documentserver, has a tendency to break when it's upgraded and oftentimes requires additional manual actions to restore its integration with the Nextcloud web application.

What command can I put in my crontab to apply all available package upgrades except for onlyoffice-documentserver?

Please note that I wish to be able to manually run sudo apt upgrade after to upgrade all packages, including onlyoffice-documentserver.
