I had been using 3 monitors, internal, vga and hdmi->dvi adaptor on an HP EliteBook. This worked in Debian 7/Fluxbox, though required Arandr and timing seemed important. ie, when starting X, I had to keep the HDMI connected one unplugged, the plug it in and restore my Arandr config. After sleeping, it required some unplugging and plugging to get it going again. In Ubuntu 13.10, I get no such luck, it will only do 2 at a time with the same error as the OP

Thanks. The indicator-sync is already installed and doesn't put anything in the tray, but the other command, followed by a & works well and I'll adapt it for automatic launching.

great! glad you're up and running. If you believe my answer to have solved your original question, please accept the answer here. Also, not to keep throwing more distribution options to you, but there is also XMBCbuntu, which comes optimized with XMBC out of the box. If that can install and is a prominent purpose for the guests, they can still use web browsers and any other Ubuntu software as usual

I would try 13.10 but also try the latest Lubuntu to see if it is the Unity desktop causing the graphics incompatibilities on your machine. Though not a great solution to your problem of getting Ubuntu installed on that MBP, I find Lubuntu to perform much better and has all the usual benefits one expects in Ubuntu.
