Further note - If I unplug the interface and plug it back in, I can see the output device in the system settings, but I still can't get sound. Makes me believe that something in the start up is not initializing the device. Any suggestions?

Basically, you need to google Windows boot loader. There is a command line app that you can use to add your Linux installation (and its location) so that when Windows loads, the first thing that will happen is you should get a choice of OS's to load. I don't know much about programming the boot loader. I was just explaining WHY you were unable to dual boot. (even though others decided that I needed to be voted down for it)

The answer is in his explanation of his process. He chosse to install along side of Windows, but he didn't install in the same place that Windows is. Grub makes a record of Windows, but grub is never laoded, the Windows boot loader is... which has no knowledge of Ubuntu.
