up to you, 15.o4 is the latest version but 14.04 has 5 years long term support, so what ever you prefer, I use 14.04 lts as it is more stable

You need to download one, Ubuntu is free, if your pc has a windows license key on it, just get an ISO from a torrent site (not cracked) and use your license key to install it, where did you get these extracted files ?

OK You must use the right program to move the files from your windows iso or dvd to the usb, not just copy/paste them, you can find full instructions and the windows usb installer here microsoft.com/en-us/download/windows-usb-dvd-download-tool It is called download tool but if you already have an iso use that. FYI to make ubuntu usb from windows you can use linuxliveusb.com

Once ubuntu is installed after "Remove disk or other media. Press any key to restart" reboot to the live usb choose try ubuntu and look here ,help.ubuntu.com/community/Boot-Repair and/or askubuntu.com/questions/226061/… this should meet your needs

Just install your windows 8 the install cd will run before grub and it will overwrite grub with the win bootloader, you are seeing grub rescue as there are no os to boot
