@muru The network installer for 15.10 is clearly linked on the Ubuntu alternative downloads page, and the Server image is a text-only install as well.

You say "beefy servers" but do not describe at all what CPU or how much RAM they have. Also, Out of Memory is not necessarily the cause. The kernel will start killing processes when you hit OOM. Also you haven't really asked a question here. You've written a lengthy post to incite discussion, not asked something for which there can be a single direct answer applied.

OK. I'm not sure what is going wrong here, but it seems like you have perhaps misconfigured the interfaces file. I'm running 14.04 on my server, with an OpenVPN server, and don't recall ever having to poke about with manually adding a bridge with brctl addbr. Also, the kernel modules are installed in /lib/modules/${uname -r}/.

This is almost certainly a duplicate, but I can't find the appropriate question to mark it a dup of right now. However, 12.04 still has another year of support (it is EOL in 2017). After it is EOL, the archives will be moved off the main server, and there will be no more security or other updates. You will need to upgrade if you want to receive any support.

Unless you've explicitly enabled some repository which provides an unstable Firefox, you won't get an unstable Firefox. You will only get normal and security updates of Firefox by default. As for Steam, it updates itself entirely outside the realm of package management. If you don't want unstable Steam, then don't sign up to the Steam beta updates program within Steam.

Unfortunately, Adobe does not support Linux systems. You might want to try gimp available in the software center as an alternative. It's open source and may fill your needs.
