Confused...mine has the (already commented) line #GRUB_DISABLE_LINUX_UUID=true. Is this what you're referring to? It says "Uncomment if you don't want GRUB to pass "root=UUID=xxx" parameter to Linux". So I'm confused, because it's commented, and I'm getting root=/dev/sda1 style output.

I ran into the issue and your answer helped; thanks. I think what happened is that the first time I did ´update-initramfs´, it had a warning saying my crypttab was invalid, and I didn't notice the warning. As a result, ´dm-crypt.ko´ was not installed. Fixing my crypttab and running this command again fixed my situation.
