I found a partial answer by myself: help.ubuntu.com/community/PinningHowto#Synaptic But, what about security updates? If the package is blocked, i don't have security updates for currently version.

@PaddyLandau the only problem for me is to keep update my addons! We use sogo addons (www.sogo.nu) and we should upate those every two months :-( With ESR we can update once a year
