If you want to change to linux (and have a CD drive) then have a go at installing from CD. If you get the same kernel panic then update your answer to say so.

I had this problem a few years ago, and I fixed it. Or it went away. I've just looked back at old xorg.conf files, and I think that maybe the following line (in the Keyboard "InputDevice" section) might have fixed it. I'm really not sure though... : Option "AutoRepeat" "500 30"

To follow a symlink a user needs to be able to navigate to the folder in question, so needs X all the way. If you don't like this then you could use mount (-o bind, from memory) to mount your folder on top of /var/www/bugzilla.
