I'm not 100% of the impact of not having it. I generally remove default packages that remove the metapackage, and my systems work fine. Upgrades have never been an issue for me. So I would generally say "No", but there might be a use case where it would matter. I've never hit one, but YMMV.

It will remove software-center and the ubuntu-desktop metapackage. The metapackage doesn't contain software itself. So technically it will remove more than just software-center, but it won't affect any of your installed software or any programs you use.

+1 for the "don't parse ls" link. It's a best practice, and vital if you're going to act on the output. A simple ls is probably pretty safe, but I like encouraging good practices. :)

Nattgew's answer is correct, but to add on one point; you're correct. Other than having Unity, the systems should pretty much be the same. There are two meta packages (ubuntu-desktop and gnome-desktop-environment). If you took a standard Ubuntu desktop and installed the gnome-desktop-environment package, you would get the same end-result as installing ubuntu-desktop on an Ubuntu Gnome install. They both use packages from the same sources.
