You should only run zero's over your drive after you have wiped it, Zero's do not adequately disguise the data that was last written. You can run zero's over the already wiped drives to avoid being tortured to death for a encryption password as the aggressor could see that the drive was zeroed and not encrypted. last time I ran shred it took over a day but it depends on the capacity of the disk.

add the output of route -n after the connection censor any sensitive IP's from output though obvs.

type route -n it will be the line that starts 0.0.0.0, the gateway ip will be under the gateway column.

Yes you should set SSH_TARGET to the ip of your ssh server your are connecting to MY_ROUTER to your gateway when your not on the tunnel and CISCO_DEV_NAME is the name of the tunnel device, connect as normal then do ifconfig -a you should see your device name of cisco VPN.
