You can use Windows Installation media. It can be either DVD or USB stick. And of coarse you can use any official Windows 7 rescue CD you can find because it doesn't rewrite it's product key.

You should try to restore Windows bootloader then to restore GRUB. Boot from Windows Rescue CD and run bootrec /fixmbr, bootrec /fixboot then follow advices in this article.

@zkent if you want to use NTFS or FAT32 as your /home, you should make small Ext2/3/4 partition and create some symlinks on it pointing to the corresponding directories on the partition you want to share. You can't just place such important parts of the system like /home on filesystems that are not designed for them.
