Thanks fossfreedom, using Ubuntu Tweak from the answers to that question has solved it for me. I don't think it's an exact duplicate, so if you add that as answer I can accept it. Or we can close this question as a duplication - I don't particularly mind.

I was reasonably confident ab initio that I would be able to split two Raid1 drives as I knew they were mirrored. I wouldn't have tried for other Raid types. Yes, it was a risk, but I had a backup of /home, all the important stuff is in Dropbox and all the really important stuff is in various git repos :)

That's not clear. StackExchange sites in general aim to collect and curate a set of questions and answers. If I edited the question to show my answer in-line, the question would not show as being "answered". As it was, the thread I found did enable me to answer my question and solve my problem.

I already tried setting the uid and gid in /etc/fstab, but it didn't change the mounted volume permissions. However, in response to your suggestion on checking the logs, it seems that usbmount is getting in before mount, which would explain why not.
