Pressing Esc while grub was loading and editing from the menu didn't work for me. I could make the change, but couldn't figure out how to save the changes. Instead, from busybox, I mounted the drive drive and chrooted (as in my original post), then edited (pico /boot/grub/menu.lst). Made the changes. Did he same for /etc/fstab, then ran grub-install. Rebooted and it looks like it worked. :) Thanks for all your help.
