Problem solved! Asked the same question on the Ubuntu forums and got the answer in a matter of hours. Solution was to simply run via the terminal. Thanks!

Ah, well how do i make a Persistence USB stick then? The instructions tell me that i need to edit the syslinux.cfg file, so if it's not there i don't understand how i can do it? unetbootin.sourceforge.net/diskimg/readme.txt

Thanks Fernhill Linux Project, that's probably the answer i was looking for, the Persistence option was something i didn't check when using the USB installer. Unfortunately i cannot test at the moment but i will have a go tonight and see what i can do. Best wishes, UbuntuRob.
