I'd like to demonstrate both Unity and Gnome Shell in a tutorial fashion. I remember that prior to the release of Gnome 3.0 the Gnome team released a number of very nice videos highlighting the features of the new interface (not just the shell). Are there any similar videos produced by Canonical, Gnome or the community that have a more tutorial-like approach?

I am not aware of any Canonical produced videos, but there are lots and lots of others. For example: http://blip.tv/ubuntu-video-tutorials.

There is also http://category5.tv/, a tech show with lots of Ubuntu related videos.
