and updating VLC, when I try to play MPEG-4 or Matroska containers with HEVC/H.265 streams VLC automatically stops.

Many vlc issues will be solved by using mc3man's multimedia PPA for Trusty Tahr. First backup your vlc config:
mv ~/.config/vlc ~/.config/vlc_bak
Then add the PPA:
sudo add-apt-repository ppa:mc3man/trusty-media
sudo apt-get update
sudo apt-get dist-upgrade
This should update your existing packages but to be sure you can run:
sudo apt-get install vlc vlc-libde265
And this should kick start your media playback...

in a terminal and open a file with a HEVC stream and 2) run something likeavprobe <FILE>
ormkvinfo-text <FILE>
and include the terminal output of both in your question?
