In others Ubuntus you could just press right mouse and add launcher. In Ubuntu 11.10, I can't do that. So, how can I add folders and files in Ubuntu 11.10 launcher?

It's not a bug. The launcher is for applications, not for web links, files or folders. There are other solutions for that. – Jo-Erlend Schinstad Oct 15 '11 at 14:30

You can't add folders to the launcher directly. You can add a quicklist to the home button that holds your bookmarks though. There's a quicklist for it. You can read more about that here: List of custom Launchers & Quicklists for Unity

You can add folders to the files lens, though. You do that by adding a bookmark in Nautilus and then they will appear as favorite folders in the files lens. Also, you could add a bottom panel to hold shortcuts if you want to. Xfce4-panel, for instance, is quite nice. However, I would recommend that you give the default a little time. It's actually quite fast to work with once you get used to it.

By the way; there is a graphical application to edit these quicklists, but I don't remember the name.
