I couldn't install Ubuntu 11.04 using AHCI at my BIOS... My disc only boots if I change my SATA settings to ATA...

What's the simplest way to use my Ubuntu with AHCI?

The kernel has AHCI support. If it isn't working for you, then you should file a bug report against the linux kernel. See help.ubuntu.com/community/ReportingBugs – psusi Jul 15 '11 at 0:20
