Just wondering if I can get rid of the launcher in the Unity desktop and replace it by something else?

You won't have much of anything left without the launcher. Go for GNOME Classic as the answers suggest. – Oxwivi May 12 '11 at 19:11

You can go back to the classic GNOME session as described in this answer.

If you log out, insert your username you can then choose (at the bottom) to log into 'Ubuntu Classic'. That'll get you the old 2 panel style gnome.

You can disable the unity plugin in cssm and log out and in again, and it's gone. But before that perhaps add something like awn to your startup applications.
