In the Software Center, Chinese descriptions appear for some programs. For example, for Gummi, the Simple Latex Editor, I get instead "Gummi - 简单的 LaTeX 编辑器".

/etc/default/locale has:

LANG="en_US.UTF-8"
LANGUAGE="en_US:en"

~/.pam_environment has:

LANGUAGE=en_US:en
LANG=en_US.UTF-8

How can I change this to English? I would also like to avoid uninstalling Chinese language support.

See if you can reproduce your problem by installing Synaptic package manager: sudo apt-get install synaptic. Search for the Gummi package in Synaptic and post the results in a comment. –  karel May 20 '13 at 3:01
    
synaptic is all English. The Gummi package description is "GTK+ based LaTeX editor with live preview" –  Rob E May 21 '13 at 8:47
