I installed 12.10 (server) onto a laptop and use xubuntu-desktop, which works fine. However, changing GRUB to boot to text and then entering startx esults, not in xubuntu, but a popup along the lines of "could not start session 'gnome'".

I don't this is a problem running GNOME, or more exactly, a component of GNOME, but just that there's a particular problem with that session. However, changing GRUB back to graphical boot "solves" the problem.

Am I not starting xubuntu from the console correctly?
