I set up LVM partitions on Debian (which is the same as doing it on Ubuntu).

How does it impact performance and how secure is it? Do I need to have access to the console when it reboots to provide the decryption key?

I'm confused.

Not a full answer, but the encryption is actually handled by LUKS, not LVM. LVM lets you put multiple volumes in one or across several physical volumes. –  Flimm Feb 22 '13 at 14:33
