In Windows Notepad if you press F5, date and time is printed in text.

Do you know any similar functionality in a simple text editor for Ubuntu?

I couldn't find anything in kate and gedit.

There's a text editor called medit. It has the ability to insert the date and time. It is accessed via Tools > Insert Date and Time. Clearly less convenient than pressing F5. medit is in the repos. –  user25656 Feb 7 '13 at 15:52
