This explains a little about Superblock, which I admittedly have never heard of.
Disk partitioning is the act of breaking a disk into different pieces, that are relatively independent on each other (like a partition for Windows that is separated from the partition for Linux)
It does not stop Windows programs from accessing your Ubuntu (nor Ubuntu programs from accessing your windows) but it makes less likely that such an access will happen by accident.
Also, Linux and Windows store files differently, so they need different kinds of partitions to hold their files.
The MBR is the place where information is kept to know what partitions have operating systems in them. The most common problem a Linux user has, related to the MBR, is when Windows overwrites the MBR, and the computer can't boot the partition with Linux
