I'm thinking of upgrading my 12.04.1 LTS server to 12.10. What do you think?
Should I be worried, or just go for it? Is it as secure as 12.04.1 was?

There is no custom kernel on the server, only a ruby which I installed by hand. But of course I would remove that and re-install the ruby package just to be sure.

ubuntu 12.04 is LTS (Long Term Support) . it is better than other version .

The 12.10 kernel will be backported for 12.04.02 and released end of January. PPAs with updated webserver software are available. I don't see any benefit here. Unless you have time to spare to play catch up with all non LTS releases on that server I recommend not doing the upgrade.
