It's easy to create ISO in terminal as described in other answers but there are some GUI options too, Like Brasero. Brasero is the default CD/DVD burning application in Ubuntu. How to create ISO images with Brasero?
If you want to burn that image to disc, Just right click on ISO image you just created and select "Open With Brasero Disc Burner". Select your optical drive and click create image.
