Ok would it be possible for my ubuntu 11.10 box (and for my 12.04 when released) to shutdown between 12 am and 6 am if inactive for 30 min, so if it is left on it will shutdown at 12:30.

Unless you design your own script, it's not possible out of the box. You can however have it go to sleep if it's inactive for a set period of time. Just remember to set the sleep method in the BIOS to S3.
